Vegetarian Chilli

Ingredients

• 1 Tbs olive oil
• 1/2 cup onion, chopped
• 1/2 cup green bell pepper, chopped
• 3 garlic cloves, minced
• Spice mix: 2 tsp chili powder + 1 tsp kosher salt + 1 tsp cumin
• 3/4 cup button mushrooms, chopped
• 1 (28-ounce) can whole crushed tomatoes with liquid, no salt added
• 1 (15-ounce) can black beans, rinsed and drained
• 1 (15-ounce) can kidney beans, rinsed and drained
• 1 cup whole kernel corn, frozen

Preparation

• Heat oil in a large pot over medium-high heat.
• Add onion and pepper and cook for 3 to 4 minutes.
• Add garlic and spice mix and continue to cook for an additional 5 minutes.
• Add mushrooms, tomatoes, beans and corn ; stir and bring mixture to a boil.
• Reduce heat to medium and simmer uncovered for 20 minutes, stirring occasionally.
